sparkling tea
So I worked at a tea shop during/after college, and we’d make sparkling tea drinks. Here was our formula:
Brew a very strong, concentrated tea “syrup” by using 4x the amount of tea we’d use for a single cup and just enough hot water to cover the tea leaves while it was brewing. Strain that out over ice, top with soda water.
It’s really delicious and can be so refreshing with fruity herbal teas, but we’d get creative with traditional tea (like earl grey) and got some fun results. That formula with the “syrup” can also be used to make hot or iced lattes!
If you’re not too familiar with brewing tea, stronger =/= steep for longer, unless it’s an herbal tea with no actual tea leaves. Steeping tea leaves for longer in an attempt to get stronger tea will result in burnt tea that tastes bitter and acidic. Stronger = more leaves/tea, same amount of time (herbal excluded).
